A Christmas classic, this is a brilliant pie to serve when entertaining family and friends before the actual big day. This pie can be made the night before so that it has plenty of time to chill in the refrigerator and you can spend more time relaxing (or not) with your mother-in-law the next day.

SERVES 6

5g butter

800g shortcrust pastry (or shop-bought)

1 egg yolk beaten with 1 teaspoon water, for brushing

For the stuffing

100g butter

200g white onions, finely chopped

1 garlic clove, peeled and finely chopped

20g chopped sage

100g white breadcrumbs

For the filling

600g turkey breast, cut into 3cm dice

500g turkey mince

30g salt

100g dried cranberries (preferably sulphur-free)
